Surprising to many people, the smells of poo, dead animal, and petrol are actually sought after in certain wines. These are not wines for the majority of wine enthusiasts. They have a place of honor in the wine hierarchy like opera has in the music world: recognized as great by many, but enjoyed by a few. The only smell on the list that is always a flaw is the smell of mold. That is the telltale sign of a “corked” wine. It should always be sent back for another bottle.
